In a world that moves fast and demands so much, (re)Root is an invitation to slow down and ground yourself again. Nestled in nature’s embrace, our Retreat is designed to help you rest deeply, restore your energy, and create new roots for a life of balance and purpose.

  • During the retreat, you’ll learn how to incorporate healthier ingredients into your daily meals in a practical, delicious, and nourishing way. Our goal is to help you use food in a conscious way, giving your body the tools it needs to do what it’s designed to do — keep you healthy, inside and out.

    You’ll learn to create meals that nourish from within, with a special focus on supporting your gut and feeding your microbiota — where over 70% of your immune system resides. Because nourishing it well is not just a physical act, but a long-term investment in your health.

    Our approach is based on meals rich in:

    Whole foods, full of fiber, vitamins, and minerals

    Fresh ingredients, locally sourced and organic whenever possible

    Primarily plant-based ingredients, complemented by seasonal and ethically sourced animal products when appropriate

    • Foods traditionally used in Eastern cultures — such as kuzu, miso, and fermented foods like sauerkraut and kimchi — staples in many long-living societies known as Blue Zones.

    We’ll also explore how to adapt your nutrition to your individual needs and rhythm, making the change sustainable and deeply personal.

    In the sweet section of the workshop, you’ll learn how to prepare desserts and snacks using natural, unrefined sweeteners with a low glycemic index, such as coconut sugar, rice syrup, or raw agave — as well as fruits, compotes, and nuts. When using flours, we’ll always choose organic, whole or semi-whole options that retain their fiber and nutrients.


    Ultimately, we want to give you practical tools to make more conscious choices — and to transform something as everyday as food into a powerful source of well-being.

    Because what we eat every day doesn’t just feed us… it transforms us. And true transformation starts within.

  • The workshop is led by Tiago Dos Santos, creator of h e n k o.

    Originally from Portugal and initially trained in audiovisual arts, his passion for food, nutrition, and Eastern philosophy led him to study macrobiotics for three years at the Macrobiotic Institute of Portugal. After that, he moved to Spain to join the kitchen team at the exclusive and newly opened SHA Wellness Clinic.

    Following his time at SHA, he chose Valencia as his new home to continue his training and work as a chef at the renowned Kimpira restaurant, part of the Macrobiotic Institute of Spain, where he also taught cooking courses and workshops.

    Those who taste his food often describe it as “subtle,” “elegant and full of nuance,” or simply “grandmother’s cooking.” He prefers to call it Mediterrasian — a fusion of flavors from here and there that awakens the sensory memory of those who experience it.

    His path, shaped by years of experience and a constant hunger to learn, led him to create Aloha Vegan Delights, a small restaurant that became a benchmark for vegan cuisine in Valencia.

    But dreams shape our lives. After years of refining a broader vision, h e n k o was born — an ecosystem of professionals that brings together his passions: nutrition, science, sports, neuroscience, cooking, personal development, and Eastern philosophy (which he continues to study as an autodidact), all in service of those who wish to live more consciously, through a holistic approach that supports sustainable, balanced, and personalized transformation.

    h e n k o offers private chef services, weekly meal plans, cooking classes, nutritional guidance, and soon, yoga and functional training.

  • A former pilgrims’ hostel, Reposo del Andayón, nestled among green meadows, where a gentle stream winds through the orchard and fruit trees sway in the breeze. Set before the majestic Sierra de la Cueva Negra and close to the sea, whose silent presence permeates the surroundings. Hidden in the village of Cuerres, between Ribadesella and Llanes, facing the ancient Camino Real de Santiago — this is a place where solitude meets warmth, and time seems to slow down. This is where the workshop unfolds: a shared space to live, rest, and nourish both body and soul.

  • Before each retreat, we send all participants the detailed agenda and practical information for their stay.

    If you’re arriving by car, on-site parking is available.

    Here’s the structure:

    August 7 (Thursday)

    • Welcome cocktail and dinner

    • Introductory talk

    August 8 (Friday)

    • 08:30 – 09:30: Breakfast

    • 10:00: Festive cooking workshop

    • 14:00: Lunch

    • 15:00 – 19:30: Free time. Route suggestion: Las Cuevas beach (also possible by bike)

    • 20:00: Dinner and free time

    August 9 (Saturday)

    • 08:30 – 09:30: Breakfast

    • 10:00: Free time. Route suggestion: Guadamía river to the beach and the Bufones de Pría

    • 13:00: Lunch

    • 17:00: Workshop – Light summer dinner

    • 20:30: Dinner and free time

    August 10 (Sunday)

    • 08:30 – 09:30: Breakfast

    • 10:00: Workshop on snacks and quick healthy meals

    • 13:30: Tasting lunch and free time

    • 18:00: Departure to the airport

  • (12 people max.)

    The process is simple:

    1. Contact us with any questions before signing up.

    2. Fill out the registration form.*

    3. Once submitted, you’ll receive a confirmation email with our bank details or Bizum number to pay the deposit (25% of total retreat price). (The remaining balance can be paid by bank transfer, Bizum, or in cash upon arrival. Please note we do not accept card payments.)

    4. Wait for us to confirm the retreat before booking any train or plane tickets.**

    5. Once confirmed, purchase your tickets and let us know your arrival time along with any relevant personal info: allergies, dietary preferences, night-time needs, or anything else that helps us take good care of you.

    6. Feel free to reach out again if you have any questions before the retreat begins.

    IF WE CANCEL the retreat, we will refund 100% of your payment.

    IF YOU CANCEL, the deposit will only be refunded if we’re able to fill your spot with another participant, and only with at least 2 weeks’ notice.
